WHere is a home-style interpretation of a beverage found on our latest cocktail list. This is a party-sized premix that is bursting full of flavours of a Christmas time, which makes it excellent for a holiday party. Reserve the remaining citrus syrup for breakfast cocktails, sweets, or for additional servings of the drink.

Yields 10 servings
Ingredients for the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Drink (makes 850ml, to serve 10)
400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch
Method
Making the Citrus Syrup: Put every items into a pot, bring to a gentle boil, agitating until the sugar dissolves. Then, remove from the burner and leave to cool completely. Pour into a sealable bottle, close it keeping it chilled, it will last for about four weeks.
To make Batch Mix: Mix all the liquid ingredients into one big jug, leave to sit for one hour, then filter it best through a fine cloth, making it completely strained.
When ready to serve: Measure 85ml of your cocktail base into a mixing glass filled with ice, and stir gently for one minute to cool it down. Filter into a chilled martini glass or a similar vessel, decorate with some cranberries and complete it using a light spray with the mandarin essence over the drink.
